So I am at a loss. I simply cannot figure out board list remodels. Could anyone give me a quick crash course on how to reorder the info? On how to do anything with them? For reference, I'm trying to take the default look and turn it into this: This is obviously a very rough mock-up, but any help would be appreciated.

Well. Good news and bad news I guess. Good news: the vast majority of this is done by HTML with the usual jqwery entries under Admin > Themes > Layout Templates > Board > Board List. Bad news: Categories aren't in there.
You can go about categories in one of two ways. You can do like what I do and opt for the "universal" approach (making that styling match just about any of the other titles on the forum) by going to Admin > Themes > Advanced Styles & CSS > Visual Editor and then mucking around under Body (Content) > Containers > Title Bars. This will adjust styling for not just the category title but also for the forum information and statistics header thing and the top area with thread titles in the threads as well.
The other option is to go into Admin > Themes > Layout Templates > Home and to adjust the category right in there by giving it an entirely new code layout with a new class. You can also find the Info Center in this area as well, so there's that too.
I know this is really sort of vague since I'm just telling you where to find things, but since I'm always a big believer in there being literally thousands of ways to code the same layout, I try not to say exactly how to do it. I know how I personally would do it but there's no right or wrong way... and I'm assuming you know how to form all of that if left to your own devices with HTML and CSS, which if not, I can definitely try to walk you through one way to make that.
Anyway, I hope this answered what you need answered!

KuroyaActually it did! I worked out a lot of it on my own in the last two hours. The only thing I'm still struggling with is jQuerys, but I'm sure I'll figure those out. I'd love to have a roll over effect on my descriptions, but, alas, coding. I'm sure I'll get it eventually though. I hope. Thank you!

A lot of the values for the jqwery stuff is actually on the side, actually, and I think a lot of what you want is under like.... board > last thread > last post and all that, but don't quote me on that. I've had some issues with Proboards being iffy about putting the values in like that, and while I do plan on eventually putting up some tutorials on how to mess with certain parts of the board structure that will include the common variables... that's not gonna happen for a while sadly :c

The variables I see. But it still won't let me just straight up recolor them. I imagine I have to do that from like, the style sheet or something. But I just cannot figure it out. I just want them to be white. Not grey. Which is this so hard.

Hmm.... what are you trying to change though? I know that the name of the poster tends to be whatever the member group color is unless you override it, and to change the thread name color, you need to do something like .class a to target it in the css. The post date thing is something else you need to target similarly, though that one is through .class abbr, if that helps?

Sort of? I was told to a an "a" after my classes when I was doing links, and tossing in an "!important" got the colors to change properly. My main problem now is that I still don't know how to do date because the same thing isn't working.
I also don't know what the "class abbr" means. Would I just add that at the end like with ".class a"? I'll try it out.
If this works, the only thing I have left to figure out is thread lists. Which are frustrating at the best of time. I still don't know how to get rid of the "subject" "Created by" etc.

Yeah, adding the !important forces all the changes. The date one, however... lemme explain it.
Say that the class around the box with the recent post stuff is called class. So just like how you did with .class a, you'd have to do .class abbr to target that. If it doesn't work the first time you add the information, try adding !important afterwards since that's telling it you want it to override whatever you've done.
To get rid of that stuff, it should be under the Layout Templates under... Board I wanna say. I know it appears somewhere in a <thead> area and if you just delete all of the <thead> stuff in that layout template, you make it all go away.
